EASY Keto-Friendly Mini Cheesecakes HOW TO: KETO DESSERT
Crust:
1/2 cup almond flour
1 tbs monk fruit sweetener
2 tbs melted butter
pinch of cinnamon
pinch of nutmeg
Cheesecake Filling:
8oz softened cream cheese
1/3 cup monk fruit sweetener
1 large egg
1/2 tsp vanilla extract
1 tsp lemon juice
1/2 tsp cinnamon
pinch of nutmeg
pinch of salt
Directions:
In a small bowl mix all crust ingredients with a spoon until well incorporated. Divide crust mixture into 6 muffin cups and press down until flattened. Bake crust in 350 degree oven for 10 min. In a mixing bowl, beat softened cream cheese until smooth. Add all other cheesecake filling ingredients and mix well until smooth. Using 1/4 cup measure scoop cheesecake mixture into muffin cups to fill. Bake for 30-35 min until just set. Allow to cool in fridge for 4-24hrs or in freezer for 1 hour before topping with toppings of your choice.
