EASY KETO QUICHE!!
Hey ya’ll!!! In this episode, I present to you a family favorite — my keto #quiche! This is a nice change from the everyday #keto breakfast of scrambled eggs and bacon! This is one you are sure to love as it is easily customizable just like my keto taco salad! Add whatever you like, the possibilities are endless! This bakes up in about 40 minutes on 375° F. Top with some full fat sour cream and chives or a few green onions for a truly delicious keto #entree!! This also freezes up well for any leftover portions.
Keto Quiche (Makes 8 servings):
1 cup heavy whipping cream
2 cups shredded mild cheddar cheese
1/4 cup shredded sharp cheddar cheese for on top (if desired)
1.5 lbs of breakfast sausage, cooked and crumbled.
Butter or bacon fat to grease baking dish
1.5 cups chopped kale
1/4 of a large red bell pepper, diced
1/4 of a large green bell pepper, diced
1/4 of a yellow onion, diced
4 stalks of raw asparagus, sauteed for 5 min
1/2 cup white mushrooms, sauteed for 5 min with asparagus
1. Preheat oven to 375°.
2. Generously grease baking dish with butter or bacon fat.
3. Heat a skillet and brown and crumble sausage. Add to the bottom of greased baking dish when done.
4. Combine eggs with heavy whipping cream. Whisk until combined well.
5. Season with your choice of seasonings. I used salt, pepper, celery flakes, onion salt, garlic powder, crushed red pepper flakes.
6. Stir all vegetables to egg mixture.
7. Stir in mild cheddar cheese shreds.
8. Pour egg mixture over cooked sausage in baking dish.
9. Top with sharp cheddar cheese and bake for 35-40 minutes. Check center of quiche with toothpick or knife until it comes out clean.
10. Top with 2 tablespoons sour cream, if desired.
