Keto Breakfast Burrito
100% cheese blanket tortilla stuffed with sausage, bacon and cheesy eggs. The only way this won’t be good is if you don’t make it. Recipe below.
3 cups of shredded mozzarella cheese
½ cup or 8 oz of cooked ground sausage
6 strips of cooked bacon
½ cup of shredded cheddar cheese
1 tablespoon of chopped chives
For the cheese blanket (tortilla)
Heat a large non stick frying pan to medium heat. Add half the shredded mozzarella and spread evenly so the cheese is covering the entire surface.
Continue to fry until the edges of the cheese start to crips and the cheese is easily removable from the pan. Place on a piece of parchment and set aside.
For the eggs
Combine the shredded cheddar cheese with the eggs and chives and whisk. Add ½ teaspoon of salt and pepper.
Add 1 tablespoon of butter to a medium pan. When the butter is melted, add the egg and cheese mixture to the pan and cook periodically mixing the contents of the pan. Set eggs aside.
Add half the sausage to the center of the cheese blanket. Add half the eggs on top of the sausage followed by the bacon.
Fold each side of the cheese inward. Roll the burrito with the opposite side creating a pocket.
