A lot of Whole30 breakfast recipes can be lacking in flavor due to the absence of things like cheese and compliant Whole30 breakfast sausage. But this Whole30 egg bake gets around this with the inclusion of nutritional yeast for that cheesy flavor, and our DIY breakfast sausage that uses ground turkey and an assortment of seasonings to replicate the flavor of breakfast sausage.

1 bunch of Kale
12 eggs, beaten
1/4 cup nutritional yeast
1 lb ground turkey
1 teaspoon italian seasoning
1 teaspoon ground sage
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1 tablespoon avocado oil
Preheat the oven to 350 degrees.
Prepare a 9×13 baking dish with cooking spray.
To cook the sausage, heat oil in a large skillet over medium high heat.
Crumble in the ground turkey, add seasonings, and cook until browned.
Remove sausage from pan.
In the same skillet, add the veggies.
Cook 3-5 minutes until beginning to soften.
Add sausage, veggies, and remaining ingredients to a large mixing bowl.
Pour mixture into the prepared baking dish and bake for 45-60 minutes, until a knife inserted in the center comes out clean.
For Meal Prep, let the casserole cool then cut into individual servings and store in refrigerator.
