1 Blueberry jiffy mix
1 flax egg ( ½ cup water + 1 tablespoon Flax meal.
Mix altogether.
Spray muffin pans with cooking spray.
It seemed to work ok without spraying, however, spraying is better.
Place the muffin pan on a cookie sheet for added stability. Fill cups about ½ to ¾ full.
Bake 12 minutes in a preheated 400 F oven.
Cool baked muffins at least 10 minutes before removing from pans. Longer would be fine
