Coconut Filling:
1 Β½ cups unsweetened shredded coconut πŸ₯₯
β…“ cup coconut oil, melted🧈

2–4 tbsp heavy cream or coconut cream (see video) πŸ₯›
½ tsp vanilla extract (beaver free!)🍦
Pinch of salt πŸ§‚

Topping:
Whole roasted almonds (2 per bar) 🌰

Chocolate Coating:
¾ cup sugar-free chocolate chips 🍫
1 T coconut oil πŸ₯₯

πŸ”ͺ Instructions
Step 1: Make Coconut Filling
In a bowl, combine shredded coconut, melted coconut oil , sweetener, vanilla, and salt.
Add heavy cream 1 T at a time until the mixture sticks together but isn’t too wet.
Spray the silicone loaf pan with avocado oil..
Press the coconut mixture firmly into the pan and smooth the top.
Top with 2 almonds per bar (about 12 total).
Freeze for 30–45 minutes until firm.

Step 2: Cut & Coat in Chocolate
Melt chocolate chips with coconut oil in 20-second bursts, stirring until smooth.
Remove the bars from the freezer and slice into 6 equal pieces.
Using forks or a dipping tool, coat each bar in the melted chocolate.
Place on a parchment-lined tray and return to freezer to set.
