Welcome to my kitchen ???? In this video, I’ll be taking you through a day of meal prep and showing you exactly what I eat in a day. From breakfast to dinner, I’ll be sharing some of my favorite recipes and tips for staying healthy and satisfied throughout the day. Oh and this video just happened to be vegetarian which is a win-win!
Meal prep is a great way to stay on track with your nutrition goals and save time during the week. By planning and preparing your meals in advance it means you have healthy options available and avoid the temptation of reaching for less healthy snacks.

RECIPES
Mediterranean pasta salad ????
250g pasta
2 peppers
handful of parsley/herb of choice
5-6 sundried tomatoes
1 ball of mozzarela cut in cubes
Curried potato salad ????
5-6 potatoes
1 onion
1 tbsp curry powder
3-4 spring onions
handful of coriander
salt & pepper
olive oil
Frittata ????
10 eggs
Splash of milk
60 g emmental
120g Edam
3-4 la cache qui rit
1 pack of mushrooms
3-4 spring onions
Berry bars ????
Ingredients
80g coconut oil melted
70g brown sugar
Juice of two oranges (about 1/2 cup)
100g oats
100g oat flour
100g all purpose flour
1 tsp vanilla
1tsp baking powder
pinch of salt
Berry jam
400g frozen berries
1 tbsp chia seeds
1 tbsp honey
Mix the dry ingredients together then add the wet and mix together.
Add about 3/4 of the mixture in a baking pan lined with baking paper top with the berry jam (just stew the jam ingredients for 15-20 min or until it’s thick like a jam) and then crumble the rest of the oat mixture on top.
Bake at 180C for 35 min ????

Tofu (I used about 3 blocks)
Soy sauce
Spice mix:
equal parts nutritional yeast and curry powder
