This Pumpkin Cottage Cheese Cheesecake is packed with protein, low in sugar, and so easy to make. With just a few ingredients and a blender, youβll have a rich cheesecake that tastes like fall in every bite.

Ingredients:
1 cup cottage cheese
2 tsp pumpkin spice
3 tbsp pumpkin purΓ©e
2 tbsp sweetener
1 egg
Β½ tsp vanilla
Directions: Blend all cheesecake ingredients until smooth. Pour into a greased ramekin.
Bake at 350Β°F for 15β20 min (center should be slightly jiggly). Cool 10β15 min, then refrigerate 1 hour.
