This is just my favorite!
I made them into small ice cream sandwiches. I was not upset!
I hope y’all enjoy!
I use the DASH mini waffle maker. The Chaffle craze has taken my household by storm so naturally I had to continue that DASH love!
Brownie Batter:
5oz low-carb chocolate (I used all 3 flavors Lily’s chocolate chips)
4TB butter, softened
3 lg eggs
1/2c. Swerve
1/4c mascarpone
1/4c unsweetened cocoa powder
Homemade mascarpone:
8oz cream cheese, softened
1/4c HWC (heavy whipping cream)
2TB butter, softened
Preheat your dash
Melt chocolate in microwave, add butter, melt and set aside to cool
Beat eggs and swerve 3-5 minutes
Add in mascarpone & mix really well
Add 2 TB cocoa powder to egg mixture & mix well
Sift in remaining cocoa powder into egg mixture and mix well
Add chocolate/butter combo & mix well
It will be thick & smell AMAZING!
Trust me when I say to make sure everything is mixed well. It’ll be smoother
Scoop batter with a large cookie scoop into the center of your preheated waffle maker
Pro tip: using oven mitts, flip your dash over to drop your brownie onto a plate. Let cool completely because they are super soft until cooled. They set up beautifully when cooled!
