200 g (abt. 7 oz.) carrot
5 eggs
150 g (5 oz) Almond Flour
3 tbsp granulated sweetener of choice
2 tsp vanilla extract
50 g (2 oz) walnut halves, crushed1 tsp ground cinnamon
1 tsp Allspice
1-2 tsp ground ginger
2 tsp baking powder
Mix ingredients and pout into butter greased baking tin. Bake at 350F/180C for about 40 minutes (baking time can vary, so check after about 20 minutes). I used an 8 inch/20cm round baking tin.
Allow the cake to totally cool down before frosting.
For the frosting, combine 1 packet of softened cream cheese with 2 tbsp sweetener of your choice. Distribute evenly over the cake.
