KETO COTTAGE CHEESE BARK | Recipe Below

This frozen cottage cheese bark is made with peanut butter, chocolate, and chopped nuts, plus it’s low carb, keto-friendly, and high protein. It’s the perfect little quick and easy dessert made in one pan and only 10 minutes of active kitchen time. Great as a summertime snack!

Ingredients
2 cups cottage cheese , full fat
¼ cup sugar-free powdered sweetener (or sweetener of choice)
1 teaspoon vanilla extract
¼ cup peanut butter , natural & unsweetened
2 oz dark sugar-free chocolate or chocolate chips , melted
¼ cup chopped nuts (almonds, pecans, or walnuts)

Instructions
1. Blend cottage cheese, sweetener, vanilla extract, and peanut butter in a blender until smooth.
2. Prepare tray: Line a 18 x 13 in (45 x 33 cm) baking sheet with parchment paper.
3. Spread cottage cheese mixture onto the baking sheet.
4. Top with melted chocolate and use a knife to create marble effect.
5. Sprinkle on chopped nuts.
6. Freeze for 3 hours or until set.
7. Cut into squares.
