KETO Lemon Mug Cake Recipe -Easy Microwave Dessert
If you need a super fast, low-fuss sweet treat, this is it! This KETO lemon mug cake recipe just requires a few minutes to prep and only 1 minute in the microwave and you’ll be in lemon heaven. It’s the ultimate easy microwave dessert. It’s full of fresh, bright lemon tang, enough sweetness to offset it and a light, airy cake texture. What’s not to LOVE?!
It’s wonderful just as it is, but I have to admit that I love the optional topping of creme fraiche & Keto lemon curd. It’s amazing! My KETO Lemon Curd recipe requires just 4 ingredients and the link is:

1 Tbsp. juice from a fresh organic lemon and zest (from 1 lemon)
Optional toppings: crème fraiche, whipped cream or full fat yogurt, lemon curd, berries
In a mug, melt butter or oil in microwave (about 15 seconds)
Add egg and whip well
Add all the other ingredients and mix well.
Microwave on full power for 1 minute.
Cool until warm or room temperature
I added 1 Tbsp crème fraiche mixed with 1 Tbsp of my Keto lemon curd
Add garnishes of choice: a dollop of crème fraiche, whipped cream or full fat yogurt, lemon curd and/or berries
* To save time or if I don’t have fresh lemons on hand, the bottled pure organic lemon juice is a life saver (I use Santa Cruz or Lakewood brands) : https://amzn.to/3f9uBI3
* If I use the bottled lemon juice, I will add a few drops of lemon extract, which mimics the flavor of lemon zest
