Keto Low Carb Mascarpone Dessert for Weight Loss & Blood Sugar Control 🍨🍓

Light, fluffy, and indulgently creamy 🍨✨ This keto mascarpone dessert has an airy, mousse-like texture with rich creaminess and gentle sweetness. Elegant but simple, it’s a beautiful low carb option for weight loss, glucose control, and better sleep when you want something satisfying without heaviness.

This recipe makes about 4 servings.

You’ll need:
🍳 2 small eggs (separate yolks and whites)
🧀 250g / 8.8 oz mascarpone cheese
🍬 40g / 1.4 oz xylitol (or sweetener of choice)
🍓 50g / 1.8 oz frozen raspberries
🍓 a few fresh raspberries for topping (optional)

How to make it:
1. Prepare two bowls and separate the egg yolks and whites.
2. Add the sweetener to the egg yolks and mix gently by hand or with a spoon until combined.
3. Beat the egg whites until stiff peaks form. They should be solid and fluffy.
4. Add one third of the mascarpone to the yolk mixture and mix with a hand mixer on medium speed until smooth. Repeat with the second third, then the final third, until fully blended and creamy.
5. Add half of the whipped egg whites to the mascarpone mixture and gently fold using a spatula. Once combined, fold in the remaining whites carefully until light and airy.
6. Place the frozen raspberries in a bowl with a little water. Let sit for a few minutes, drain, then blend into a smooth purée.
7. Spoon the raspberry purée into the bottom of serving glasses or bowls, top with a generous layer of mascarpone cream, and decorate with fresh raspberries if desired.
8. Refrigerate for 2 hours before serving.
