Pork Carnitas is an amazingly simple keto meal prep recipe you can do. These carnitas are cooked in a slower cooker either over night or while you are working. The carnitas can be used to prep your keto meals. In this video, I show you how I use crock pot carnitas to make a low carb Carnitas Salad, a Keto Carnitas Burrito, and a low carb BBQ Carnitas Pizza using Fat Head Dough. These are all very easy keto meal ideas that you can use with the carnitas THAT you meal prepped. Enjoy them as a quick keto lunch or on the go keto dinner.

KETO PORK CARNITAS RECIPE
3 – 4 pound pork shoulder
1 onion, chopped
5 garlic cloves, minced
1.5 teaspoons salt
1 teaspoon red pepper flakes
1 teaspoon oregano
1 teaspoon ground cumin
¼ teaspoon cayenne pepper
6-7 whole cloves or ¼ teaspoon ground cloves
2 bay leaves
Optional & delicious: ½ orange peel, 1 inch of a cinnamon stick

Cook on low for about 8 hours. Remove and shred in a bowl. Pour juice from the slow cooker in to give more flavor.

FATHEAD PIZZA DOUGH

10 oz mozzarella cheese
1 egg
5 oz almond flour
1 teaspoon baking powder

Whisk almond flour and baking powder in a small bowl and set aside.
Melt cheese in a glass bowl in the microwave using 30 second intervals until all cheese is melted. Add in the egg and beat with electric mixer or by hand until almost combined.
Add in dry mixture and continue to beat until combined.
Roll out in between two pieces of parchment paper until the dough is about ¼ inch thick. Bake at 350 for 10 minutes.
Flip over, add toppings and bake for additional 8-10 minutes or until cheese is melted.
