Lemon Truffles

These lemon truffles are like little edible sunshines. Soft, sweet, and citrusy with a creamy texture that melts in your mouth. They look like lemons, they taste like lemons, and they’re keto, gluten free, low carb, and secretly packed with protein and nutrition thanks to the scoop of Keto Chow in the mix.
Ingredients
Truffle Mix
2/3 cup powdered sugar-free sweetener (like Swerve or allulose)
Zest of 2 medium lemons
1 cup (112g) almond flour
1 scoop or packet or serving Vanilla or Lemon Meringue Keto chow
4 tbsp unsalted butter, softened
2 tbsp fresh lemon juice
1 tsp vanilla extract
Coating
5 ounces sugar-free white chocolate chips (like Lily’s)
1-2 tbsp coconut oil or butter
Yellow food coloring (optional, for looks only)
Rub lemon zest into powdered sugar-free sweetener with your fingertips to release essential oils from the zest.
Mix in almond flour, Keto Chow, butter, vanilla extract, and lemon juice with an electric mixer on medium speed until a dough forms.
Scoop out truffles using a 2 TB cookie scoop or tablespoon. Place a toothpick or skewer through the middle for easy dipping.
Put in the freezer for 25 minutes.
Meanwhile, melt sugar-free white chocolate chips and coconut oil or butter on 15 second intervals in the microwave until smooth and fully melted. (Or use double boiler method). Mix in 2 drops of yellow food coloring (totally optional).
Dip chilled truffles in melted chocolate, remove the skewer, cover the hole from the skewer with a little bit of melted chocolate and a mint leaf.
Makes 6-7 large lemon-sized truffles with coating
