1 medium onion
1 tbs garlic paste
1 tbs ginger paste
1 tbs Italian herbs
1-1/2 tsp salt
1 tsp chilli powder
1 tsp garlic powder
1 tsp Paprika
2 tbsp cumin & coriander powder
2 lbs veal mince
1 large spaghetti squash
1/2 Cup Olive oil

Wash and cut spaghetti squash in half. then seasoned with salt, black pepper and lightly spray some extra virgin olive oil. Now place squash upside down on a baking tray and bake for 35-45minutes (depends upon the size of the squash) at 425F. After 45minutes check if the top surface of the squash deflates then it means squash is cooked perfectly. Now Take out squash from oven and pull the pulp from fork while hot. You can see the pulp of spaghetti squash looks like spaghetti and because it doesn’t have any taste that is why can go very well with meatballs sauce and you can use it any other recipe of your choice. Store the pulp in fridge for 4-5 days.

To cook meatballs add all spices along with onion and ginger garlic pastes in a food processor. Grind all ingredients and then add 2 pounds lean veal mince and grind until all ingredients combined well. Now transfer mixture in a bowl and line a baking tray with parchment paper. Then take some oil to grease hands to make balls out of this mixture. Once all meatballs are formed then place in fridge for an hour to set.
To cook meatballs add 1/2 cup of extra virgin olive oil in a pan and add meatballs one by one. Do not over crowd the pan. Cook at medium flame for 5 minutes then turn sides and cover to cook for 10 minutes. After ten minute add 2 cups of organic marinara sauce and cover to cook for another 10 minutes.
You best easy juicy meatballs are ready to serve. In a serving dish place spaghetti squash and then top with meatballs and sauce. enjoy!
