This quick Low Carb Tuna Melt Quesadilla is perfect for a fast lunch!
Mix drained tuna (425g), chopped celery (1/4 cup), chopped red onion (1/4), finely chopped parsley (2-3 tbsp), Greek yogurt (1/3 cup), dijon or American mustard (2-3 tbsp), and add salt and pepper to taste in a bowl.
Place a low carb tortilla in a pan. On one side, add shredded cheese, chopped tomatoes, and some of your tuna mix. Fold it over to cover the filling. Cook each side in a dry pan for a few minutes until crispy (use a plate to flip it). Serve immediately.
