Biscuit ingredients
1/2 cup pork rind dust/crumbs/panko (whatever you want to call it)
1/2 cup coconut flour
1.5 tsp garlic powder
1 tsp (ish) salt
2 tsp baking powder
1/4 cup beef tallow
3/4 cup sour cream
1/4 cup dried chives
2 whole eggs
3/4 cup egg white very lightly beaten to have a little bit of frothiness (OR 3 egg whites OR 3 tbsp egg white powder reconstituted with 9 tbsp water and mixed)
1.25 cups cheddar cheese
** Optional a little melted butter
Instructions
Sift the dry ingredients together
with a pastry cutter cut in the tallow until mixed in and crumbly.
Add in the wet ingredients and mix, when batter begins to thicken add in chives and cheddar. Stir until batter thickens and becomes hearty scoopable
Scoop onto a parchment lined baking sheet
Bake at 350 degrees F about 25-28 minutes until browned on the bottom and edge and just starting to get some color on top. *** Optional: Brush with melted butter just as you take out of oven. Put on cooling rack immediately and let rest 10-30 minutes before serving
Makes 12 big drop biscuits
