Cake Base
1 ½ cups almond flour
¼ cup coconut flour
1 cup powdered allulose or monk fruit/allulose blend
½ cup unsweetened shredded coconut
½ cup butter, melted
½ cup unsweetened almond milk (or coconut milk)
3 large eggs
1 tsp vanilla extract
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
Filling
1 (1 oz) box sugar-free instant pudding mix (vanilla or coconut cream)
2 cups unsweetened almond milk
Glaze
½ cup butter
½ cup unsweetened coconut milk (or almond milk)
½ cup powdered allulose or monk fruit/allulose blend
1 cup unsweetened shredded coconut (toasted optional)
