The Easiest Low-Carb Air Fryer Frittata | Keto Mediterranean Recipe

📌 INGREDIENTS:
* 4-5 large eggs
* 2 handfuls of fresh spinach (approx. 2 cups or 60g)
* ½ zucchini
* ½ red onion
* 10-12 cherry tomatoes
* 100-130g (about ½ cup crumbled) feta cheese
* 3-4 tbsp grated Parmesan cheese
* Mixed peppercorns (black, red, white), freshly ground
* 2 tsp dried oregano
* Olive oil for greasing the pan
* *For serving:* Fresh arugula and olives
✅ INSTRUCTIONS:
1. Preheat your air fryer to 200°C (400°F).
2. Slice the zucchini and onion. Place them in the air fryer basket and cook for 15 minutes, adding halved cherry tomatoes halfway through.
3. While the veggies are roasting, finely chop the spinach.
4. In a bowl, combine the eggs, ground pepper, dried oregano, and the chopped spinach.
5. Whisk everything together until well mixed.
6. Once roasted, transfer the vegetables to a greased, air-fryer-safe baking dish.
7. Pour the egg mixture over the vegetables.
8. Air fry at 180°C (350°F) for about 17 minutes.
9. With 6-8 minutes left, sprinkle the feta cheese on top.
10. With 1-2 minutes left, add the grated Parmesan cheese.
11. Carefully remove from the air fryer, serve with fresh arugula and olives. Enjoy!
