Ingredients:
For the Cauliflower:

1 medium head of cauliflower, cut into bite-sized florets
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika (for color)
Salt & pepper to taste
For the Manchurian Sauce:

1 tbsp olive oil
2 cloves garlic, minced
1/2 inch ginger, grated
2 tbsp soy sauce (or coconut aminos for soy-free)
1 tbsp tomato paste (or low-carb ketchup)
1 tbsp rice vinegar
1 tsp erythritol or monk fruit sweetener
1 tsp chili garlic sauce (or Sriracha)
1/4 tsp xanthan gum (to thicken)
2 tbsp chopped green onions (for garnish)
1 tbsp sesame seeds
Instructions:
1️⃣ Roast the Cauliflower:

Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Toss cauliflower florets with olive oil, garlic powder, paprika, salt, and pepper.
Spread out evenly and roast for 20-25 minutes, flipping halfway, until golden and crispy.
2️⃣ Prepare the Sauce:

In a pan over medium heat, add olive oil, garlic, and ginger. Sauté for 30 seconds.
Stir in soy sauce, tomato paste, rice vinegar, erythritol, and chili garlic sauce.
Simmer for 2-3 minutes. Sprinkle in xanthan gum and mix until slightly thickened.
3️⃣ Toss & Serve:

Once the cauliflower is done, toss it in the hot sauce until fully coated.
Garnish with green onions & sesame seeds, and enjoy immediately!
